At the Saturday RJH meeting, I mentioned `mug of muffins`which people apparently hadn`t heard of. So I will give you my `down and dirty`quick recipe. There are, of course, many sites (see my previous posting on favorite websites) that have similar, but this one is ridiculously easy. Here goes:
spray a wide mouth coffee cup or mason jar with `pam`
Drop in an egg
1 scoop unflavoured soy protein powder (whey isolate doesn`t cook well)
a bit of baking powder – maybe an eighth of a spoon
stevia to taste
a few raisins or walnuts and cinnamon, ginger etc (pumpkin pie spice mix)
Stir, stir.
Put in micro; should be around 2.5 minutes. When cooked (you can poke it with a knife – it should come out clean), run a knife around the edge and turn it upside down. It will fall out.
Eat warm, or cold, or toasted. Sometimes I top with light cream cheese and sugarless jam or yoghurt
If you make an unsweetened version you can cut it in half and use it like an english muffin…….
Alternates: add a bit of pumpkin to the batter. It will take longer to cook though.
Add a few chunks of cheddar cheese and 1 slice chopped cooked bacon.
Add a tbsp ground flax
……as you can see, you can add anything to it.
